Ingredients

  • 1/3 cup butter
  • 1/2 cup brown sugar
  • 1 (1 lb 2 oz) can pineapple, drained
  • 1 1/2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup soft shortening
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 1 egg

Instructions

  1. Melt butter in a heavy 10-inch skillet or square pan.
  2. Sprinkle brown sugar evenly over the melted butter.
  3. Arrange pineapple slices in a decorative pattern over the brown sugar layer.
  4. Sift together flour, sugar, baking powder, and salt in a bowl.
  5. Add soft shortening, milk, and vanilla to the dry ingredients and mix.
  6. Beat the mixture for 2 minutes.
  7. Add the egg and beat for an additional 2 minutes.
  8. Pour the batter over the arranged fruit in the pan.
  9. Bake at 350°F (175°C) for 40 to 50 minutes.
  10. Turn the cake upside-down onto a serving plate immediately after baking.
  11. Leave the pan over the cake for 10 minutes to set.
  12. Remove the pan carefully and serve the cake warm.
