Instructions
- Cream margarine and sugar; add molasses.
- Add egg substitute; beat well.
- Add ginger, cinnamon, and flour; mix well.
- Dissolve soda in boiling water.
- Add to mixture and mix well.
- Pour batter into three 9-inch cake pans that have been sprayed with cooking spray. Batter will be thin.
- Bake at 375°F (190°C) for 12 to 15 minutes.
- Cool; remove from pans.
- Stack with applesauce or dried apples between each layer.
