Ingredients

  • 1/2 cup light margarine
  • 1/4 cup sugar
  • 1/4 cup egg substitute
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/4 cup molasses
  • 1 1/4 cups self-rising flour
  • 1/2 teaspoon soda
  • 1/2 cup boiling water
  • applesauce or dried apples

Instructions

  1. Cream margarine and sugar; add molasses.
  2. Add egg substitute; beat well.
  3. Add ginger, cinnamon, and flour; mix well.
  4. Dissolve soda in boiling water.
  5. Add to mixture and mix well.
  6. Pour batter into three 9-inch cake pans that have been sprayed with cooking spray. Batter will be thin.
  7. Bake at 375°F (190°C) for 12 to 15 minutes.
  8. Cool; remove from pans.
  9. Stack with applesauce or dried apples between each layer.
