Ingredients

  • 1 lb pinto beans
  • 1 large diced onion
  • 1 large diced green pepper
  • 1 bay leaf
  • salt to taste
  • pepper to taste
  • garlic powder to taste

Instructions

  1. Saute the diced onion and green pepper until tender.
  2. Mix the sautéed vegetables with the remaining ingredients: pinto beans, bay leaf, salt, pepper, garlic powder, and sliced German sausage.
  3. Cover with water in the slow cooker.
  4. Cook on medium overnight or until beans are tender and flavors meld.
  5. Ensure there is enough water to prevent the beans from boiling dry and burning.
  6. Serve over rice.
