No-cook fruit balls combine dried fruits, nuts, and coconut for a naturally sweet, energy-boosting snack ideal for quick treats or healthy on-the-go options.

Ingredients

  • 3/4 cup pitted dried prunes
  • 3/4 cup pitted whole dates
  • 1/2 cup dried apricots
  • 1/2 cup blanched whole almonds
  • 1/4 cup raisins
  • 2 tablespoons frozen orange juice concentrate
  • 2 teaspoons honey or molasses
  • 1 1/4 cups coconut

Instructions

  1. Using a food processor or food grinder with a coarse blade, grind together dried prunes, whole dates, dried apricots, almonds, and raisins.
  2. Turn the ground mixture into a mixing bowl and add frozen orange juice concentrate and honey or molasses.
  3. Stir until well combined.
  4. Shape the mixture into balls and roll in coconut.
  5. Store tightly covered in refrigerator.
