  • 9 red peppers
  • 9 carrots
  • 2 cabbage heads
  • 2 Tbsp celery seed
  • 1 hot pepper

Instructions

  1. Chop all vegetables and peppers.
  2. Put the chopped vegetables and peppers in a dishpan.
  3. Pour 1/2 cup plain salt over the mixture without stirring.
  4. Let stand for 4 hours.
  5. Drain all water off the mixture.
  6. Mix 8 cups sugar and 8 cups vinegar cold; pour over the vegetables.
  7. Mix well and put into jars.
  8. Pressure cook at 5 pounds pressure for 5 minutes.
