Ingredients

  • 2 medium tomatoes
  • 1/2 medium onion
  • 1/2 medium green pepper
  • 1 small fresh jalapeno pepper (optional)
  • 1/4 cup fresh cilantro
  • 1 tablespoon lime or lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin

Instructions

  1. Cut vegetables into 1/2-inch or smaller pieces.
  2. Combine all ingredients in a bowl.
  3. Set aside 1/2 cup of the mixture.
  4. Place remaining ingredients into a food processor or blender.
  5. Pulse until desired texture is achieved.
  6. If no food processor or blender is available, chop ingredients as finely as possible.
  7. Add the reserved 1/2 cup mixture back into the blended salsa and stir.
  8. Transfer the salsa to a shallow serving dish.
  9. Chill for 15 minutes before serving.
