Ingredients

  • 3/4 to 1 lb. fresh mushrooms
  • 1/4 c. butter or oleo
  • 2 c. cooked shrimp, cleaned
  • 2 c. cooked rice
  • 1 c. chopped green pepper
  • 1/2 c. chopped onion
  • 1 c. chopped celery
  • 1/4 c. chopped pimento
  • 1 (No. 2) can tomatoes drained or 1 can tomato soup
  • 3/4 tsp. salt
  • 1/2 tsp. chile powder

Instructions

  1. Cook mushrooms in butter just until tender.
  2. Combine cooked mushrooms, shrimp, rice, green pepper, onion, celery, pimento, tomatoes or tomato soup, salt, and chili powder.
  3. Place the mixture in a greased 2-quart casserole.
  4. Pour 1/2 cup butter over the mixture.
  5. Bake at 300°F for 50 to 60 minutes.
