Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 1 cup buttermilk or sour milk
  • 3 tablespoons vegetable oil or melted margarine
  • 1 cup cornmeal
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Mix together the eggs, sugar, buttermilk or sour milk, and vegetable oil or melted margarine.
  2. Add the cornmeal to the wet mixture and stir well.
  3. Sift together the flour, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the cornmeal mixture, stirring until just combined.
  5. Pour the batter into a greased and floured 8-inch square or 9-inch round pan.
  6. Bake in a 425°F oven for 20 to 30 minutes until a cake tester inserted into the center comes out clean.
