Ingredients

  • 1 lb ground beef
  • 1 chopped onion
  • 1 package taco mix
  • 1 large can kidney or pinto beans
  • 1 package noodles or 4 cups cooked Minute rice
  • 1 large jar medium salsa
  • 1 can Spanish tomatoes

Instructions

  1. Cook the ground beef and chopped onion in a large skillet until browned and onion is tender.
  2. Add the taco mix, kidney or pinto beans, salsa, and Spanish tomatoes to the skillet. Mix well.
  3. Simmer the mixture, covered, until the noodles or cooked rice are soft, adding water if necessary.
  4. Serve hot, garnished as desired.
