Ingredients

  • 12 ladyfingers, split
  • 3/4 cup margarine
  • 1 3/4 cups sifted confectioners sugar
  • 6 egg yolks
  • 1/4 cup milk
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon rum extract
  • 4 ounces chocolate, melted
  • 6 egg whites
  • 1 1/2 cups pecans, coarsely chopped
  • whipped cream

Instructions

  1. Line a 9 x 5 x 3-inch pan with waxed paper.
  2. Arrange ladyfingers around the sides and bottom of the pan.
  3. Cream the margarine until smooth, then gradually add the confectioners sugar, beating until light and fluffy.
  4. Add egg yolks one at a time, beating until smooth after each addition.
  5. Blend in milk, vanilla, and rum extract.
  6. Add melted chocolate and blend until well combined.
  7. Beat egg whites until stiff peaks form, but not dry.
  8. Fold the egg whites into the chocolate mixture.
  9. Fold in the chopped pecans.
  10. Pour the mixture into the prepared pan.
  11. Refrigerate overnight before serving, topped with whipped cream.
