Ingredients

  • 3 egg whites
  • 1 tsp baking soda
  • 20 Ritz crackers
  • 1/2 tsp vanilla
  • 1 cup sugar
  • 3/4 cup chopped pecans
  • 1 quart soft ice cream

Instructions

  1. Beat egg whites until stiff.
  2. Fold in sugar, baking soda, and vanilla.
  3. Mix chopped pecans and crushed Ritz crackers.
  4. Add nut and cracker mixture to egg whites and fold gently.
  5. Line a 10-inch buttered pie pan with the mixture and bake at 325°F until set, about 30 minutes.
  6. Remove from oven and cool until the crust has flallen into place.
  7. Fill the center with soft ice cream.
  8. Top with frozen fruit and whipped cream before serving.
