Ingredients
- vegetable oil spray ⓘ
- 3/4 cup sugar ⓘ
- 1/4 cup margarine ⓘ
- egg substitute equivalent to 1 egg ⓘ
- 1/4 cup unsweetened applesauce ⓘ
- 2 cups all-purpose flour ⓘ
- 1 tablespoon freshly grated nutmeg or 1 teaspoon ground nutmeg ⓘ
- 1/2 teaspoon baking powder ⓘ
- 1/2 teaspoon baking soda
- 1 cup nonfat or low-fat buttermilk
Instructions
- Preheat oven to 350°F (175°C). Lightly spray a 9 x 5 x 3-inch loaf pan with vegetable oil spray.
- In a large mixing bowl, cream together the sugar and margarine.
- Add the egg substitute and applesauce, and beat well.
- In a medium bowl, sift together the flour, grated or ground nutmeg, baking powder, and baking soda twice.
- Alternately add the flour mixture and buttermilk to the sugar mixture, beginning and ending with the flour mixture, stirring after each addition.
- Pour the batter into the prepared loaf pan.
- Bake for 45 to 60 minutes or until a cake tester or toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then turn the bread onto a cooling rack.
