Ingredients

  • vegetable oil spray
  • 3/4 cup sugar
  • 1/4 cup margarine
  • egg substitute equivalent to 1 egg
  • 1/4 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 tablespoon freshly grated nutmeg or 1 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup nonfat or low-fat buttermilk

Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a 9 x 5 x 3-inch loaf pan with vegetable oil spray.
  2. In a large mixing bowl, cream together the sugar and margarine.
  3. Add the egg substitute and applesauce, and beat well.
  4. In a medium bowl, sift together the flour, grated or ground nutmeg, baking powder, and baking soda twice.
  5. Alternately add the flour mixture and buttermilk to the sugar mixture, beginning and ending with the flour mixture, stirring after each addition.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 45 to 60 minutes or until a cake tester or toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then turn the bread onto a cooling rack.
