Ingredients

  • 1 1/4 cups boiling water
  • 1/2 cup oleo or shortening
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup quick oats
  • 1 1/3 cups flour
  • 1 teaspoon soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Pour boiling water over oats and let stand for 20 minutes.
  2. Cream together the white sugar, brown sugar, and shortening.
  3. Add the soaked oats to the creamed mixture.
  4. Beat in the eggs until well combined.
  5. Stir in vanilla, flour, baking soda, baking powder, and salt.
  6. Pour batter into a greased and floured pan.
  7. Bake at 350°F (175°C) for 35 to 40 minutes until a toothpick inserted in the center comes out clean.
