- 1 Tbsp. shortening or vegetable oil cooking spray ⓘ
- 1 c. dried cherries ⓘ
- 1 c. boiling water ⓘ
- 1 c. unsalted butter, softened ⓘ
- 3/4 c. brown sugar ⓘ
- 3/4 c. granulated sugar ⓘ
- 2 eggs ⓘ
- 1 tsp. vanilla ⓘ
- 2 c. white or wheat flour ⓘ
- 1/2 tsp. salt
- 1 tsp. baking soda ⓘ
- 2 c. quick oatmeal ⓘ
- 12 oz. semi-sweet chocolate chips ⓘ
Instructions
- Preheat oven to 375°F (190°C).
- Use shortening or cooking spray to grease cookie sheets.
- Pour boiling water over dried cherries and let soak for 10 minutes, then drain.
- In a large mixing bowl, beat softened butter, brown sugar, and granulated sugar until creamy.
- Add eggs one at a time, then mix in vanilla.
- In a separate bowl, whisk together flour, salt, and baking soda.
- Gradually add dry ingredients to wet ingredients, mixing well.
- Stir in quick oatmeal, soaked cherries, and chocolate chips.
- Drop spoonfuls of dough onto prepared cookie sheets.
- Bake for 10-12 minutes or until golden brown.
- Allow cookies to cool on wire racks before serving.
