Ingredients

  • 1 Tbsp. shortening or vegetable oil cooking spray
  • 1 c. dried cherries
  • 1 c. boiling water
  • 1 c. unsalted butter, softened
  • 3/4 c. brown sugar
  • 3/4 c. granulated sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 c. white or wheat flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 2 c. quick oatmeal
  • 12 oz. semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Use shortening or cooking spray to grease cookie sheets.
  3. Pour boiling water over dried cherries and let soak for 10 minutes, then drain.
  4. In a large mixing bowl, beat softened butter, brown sugar, and granulated sugar until creamy.
  5. Add eggs one at a time, then mix in vanilla.
  6. In a separate bowl, whisk together flour, salt, and baking soda.
  7. Gradually add dry ingredients to wet ingredients, mixing well.
  8. Stir in quick oatmeal, soaked cherries, and chocolate chips.
  9. Drop spoonfuls of dough onto prepared cookie sheets.
  10. Bake for 10-12 minutes or until golden brown.
  11. Allow cookies to cool on wire racks before serving.
