Ingredients

  • 2 c. butter or margarine
  • 2 c. brown sugar, firmly packed
  • 2 c. sugar
  • 2 tsp. vanilla
  • 4 eggs
  • 3 c. sifted flour
  • 2 tsp. salt
  • 2 tsp. baking soda
  • 6 c. quick cooking rolled oats
  • 1 1/2 c. flaked coconut

Instructions

  1. Cream butter and sugars until fluffy.
  2. Stir in vanilla, then add eggs one at a time, beating after each addition.
  3. Sift together flour, salt, and baking soda.
  4. Add the sifted dry ingredients to the creamed mixture and mix well.
  5. Stir in rolled oats and flaked coconut.
  6. Drop by teaspoons about 2 inches apart on a well-greased baking sheet.
  7. Bake at 350°F (175°C) for 10 to 15 minutes until golden brown.
