Ingredients

  • 2 3/4 cups boiling water
  • 1/2 cup softened oleo
  • 1 cup brown sugar
  • 1/2 teaspoon soda
  • 2 eggs
  • 5 1/2 cups flour
  • 1 cup uncooked quick oats
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 3/4 teaspoon cinnamon

Instructions

  1. Combine the boiling water, softened oleo, and uncooked quick oats in a covered bowl and set aside.
  2. In a separate bowl, mix together the brown sugar, sugar, baking powder, soda, vanilla, eggs, salt, flour, and cinnamon until well combined.
  3. Add the oat mixture to the dry ingredients and mix well.
  4. Pour the batter into a greased and floured sheet cake pan.
  5. Bake at 350°F (175°C) for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
  6. Leave unfrosted or top with a light buttercream frosting if desired.
