Ingredients

  • 6 1/2 oz. jars marinated artichoke hearts
  • 1 small onion
  • 4 eggs
  • 2 c. sharp Cheddar cheese, grated
  • 2 Tbsp. chopped parsley
  • 1/4 c. seasoned dry bread crumbs
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Drain and reserve oil from one jar of marinated artichoke hearts.
  2. Cook chopped onions in the reserved oil until translucent.
  3. Coarsely chop the artichoke hearts and add to the onion mixture.
  4. Beat the eggs and mix with the onion and artichoke mixture.
  5. Add grated Cheddar cheese, chopped parsley, seasoned dry bread crumbs, salt, and pepper; mix well.
  6. Pour the mixture into a greased 9 x 13-inch pan.
  7. Bake at 325°F (163°C) for 30 minutes.
  8. Cut into bite-sized squares and serve hot.
