Ingredients

  • 1 1/2 cups cornmeal
  • 1 cup sour cream
  • 1/2 cup cooking oil
  • 1/2 teaspoon salt
  • 1 large bell pepper, chopped
  • 1 cup whole kernel corn
  • 2 eggs
  • 3 teaspoons baking powder
  • 1 large onion, chopped
  • 1 cup water ground cornmeal
  • water

Instructions

  1. Premelt fat drippings in a seasoned cast-iron skillet, just enough to cover the bottom well.
  2. Combine cornmeal, baking powder, and salt in a bowl.
  3. In another bowl, whisk together eggs, sour cream, and water ground cornmeal.
  4. Add chopped onion, bell pepper, and whole kernel corn to the wet ingredients.
  5. Mix the wet and dry ingredients until just combined.
  6. Pour the batter into the prepared skillet.
  7. Bake at 375°F (190°C) for about 30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
