Ingredients

  • 1 1/2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 pound can fruit cocktail and juice
  • 2 eggs
  • 1 cup brown sugar
  • 1 cup coconut
  • 1 cup pecans
  • 2/3 cup sugar
  • 1/4 cup evaporated milk

Instructions

  1. Mix 1 1/2 cups sugar, flour, baking soda, baking powder, and salt together in a bowl.
  2. Add eggs and fruit cocktail with juice to the dry ingredients and stir until well combined.
  3. Pour the batter into a greased and floured 13 x 9-inch pan.
  4. Bake in a preheated oven at 350°F (175°C) for about 35 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow to cool slightly before serving.
