Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 eggs
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 1 cup real mayonnaise
  • 1/2 cup milk
  • 3 cups unpeeled, diced red apples (about 1 1/4 lb.)
  • 1 cup coarsely chopped walnuts
  • 1/2 cup finely diced celery

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 12-cup fluted tube pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  3. In another bowl, beat the eggs and sugar until well combined. Stir in the vanilla and mayonnaise.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the diced apples, chopped walnuts, and diced celery.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
