Waldorf Salad Cake

- 2 teaspoons ground cinnamon ⓘ
- 2 eggs ⓘ
- 1 1/2 cups sugar ⓘ
- 1 teaspoon vanilla ⓘ
- 1 cup real mayonnaise ⓘ
- 1/2 cup milk ⓘ
- 3 cups unpeeled, diced red apples (about 1 1/4 lb.) ⓘ
- 1 cup coarsely chopped walnuts ⓘ
- 1/2 cup finely diced celery ⓘ
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 12-cup fluted tube pan.
- In a large bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
- In another bowl, beat the eggs and sugar until well combined. Stir in the vanilla and mayonnaise.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the diced apples, chopped walnuts, and diced celery.
- Pour the batter into the prepared pan and smooth the top.
- Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
