Ingredients

  • 2 lb navy beans
  • 3/4 lb cubed salt pork or minced ham
  • 1/2 cup dark brown sugar or 1 tablespoon molasses
  • 2 small onions chopped
  • 1 tablespoon dry mustard
  • 1/2 cup catsup
  • 1 teaspoon pepper
  • 1 tablespoon salt

Instructions

  1. Soak the navy beans overnight, then discard the soaking liquid.
  2. Combine the soaked beans with cubed salt pork or minced ham, brown sugar or molasses, chopped onions, dry mustard, catsup, pepper, and salt in a large pot or bean pot.
  3. Add water to cover all ingredients.
  4. Place the mixture in a roaster or bean pot and bake at 300°F for 7 hours.
  5. Cover during the first hour of baking.
  6. Add water frequently during baking to keep the beans barely covered with liquid.
  7. In the last few minutes of cooking, cream in or stir in 3 tablespoons of butter before serving.
