Ingredients

  • 6 to 8 white potatoes, peeled and sliced
  • 3 medium onions, sliced
  • 1 1/2 tsp salt
  • 6 c milk, scalded
  • 2 Tbsp chopped parsley
  • black pepper

Instructions

  1. Put the potatoes and onions in a kettle with the salt and cover with 4 cups of cold water.
  2. Bring to the boiling point, cover, and cook gently for 20 minutes.
  3. Transfer the cooked vegetables to a blender and puree until smooth or mash them to a pulp in the water.
  4. Add the scalded milk and season to taste with salt and plenty of black pepper.
  5. Garnish liberally with chopped parsley before serving.
