Ingredients

  • 2 cups fresh corn
  • 3 eggs, beaten
  • 2 tablespoons milk
  • 1 tablespoon melted butter
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/4 cups flour

Instructions

  1. Mix all ingredients together in the order given, adding just enough flour to hold the fritters together.
  2. Drop spoonfuls of batter into hot fat and cook for 3 to 5 minutes until golden brown.
  3. Drain on paper towels before serving.
