  2. Add the beaten eggs, grated Italian cheese, chopped ripe olives, salt, pepper, minced onion, and garlic salt to the mixture.
  3. Mix well with your hands, then form a tablespoon of the mixture into cylinders about 1 inch thick and 2 inches long.
  4. Place the formed olivolis on wax paper, cover with a towel, and store in the refrigerator overnight.
  5. When ready to serve, bring salted water to a boil in a large saucepan.
  6. Drop the olivolis into the boiling water, spacing them so they are not crowded.
  7. Cook until they float to the top, indicating they are done.
  8. Lift out with a slotted spoon to drain and place in a shallow casserole or chafing dish to keep warm.
  9. Serve with meat olive sauce.
