Ingredients

  • 2 Tbsp. cooking oil
  • 1 c. sliced fresh mushrooms
  • 6 eggs
  • 1/3 c. milk
  • 1 tsp. chopped green onion
  • salt and pepper to taste
  • shredded cheese
  • parsley

Instructions

  1. In cooking oil, sauté mushrooms gently over low heat.
  2. Combine eggs, milk, chopped green onion, salt, and pepper in a bowl and beat lightly.
  3. Add the egg mixture to the sautéed mushrooms and cook slowly over low heat.
  4. As the egg mixture sets, gently lift the edges with a spatula to allow uncooked egg to flow underneath.
  5. When the omelet is mostly cooked, fold it in half.
  6. Garnish with shredded cheese and parsley before serving.
