Ingredients

  • 4 to 6 pork chops
  • 1 large can tomatoes
  • 1 to 2 green peppers, cut in strips
  • 1 large yellow onion, sliced
  • 1 large can sweet potatoes or raw yams
  • salt
  • pepper

Instructions

  1. Salt, pepper, and flour the pork chops.
  2. Brown the chops in a small amount of oil in a large skillet.
  3. Drain off the fat.
  4. Add green peppers, onions, and canned tomatoes to the skillet.
  5. If using raw yams, add them now.
  6. If using canned yams, add them later and simmer the chops, covered, for 30 minutes or until done.
  7. Add sweet potatoes and heat through before serving.
