Ingredients

  • 1 stalk celery, diced
  • 1 (6 1/2 oz.) can boneless, skinless pink salmon
  • 1 (10 3/4 oz.) can condensed cream of shrimp soup
  • 1 cup skim milk
  • 1 cup frozen broccoli
  • finely shredded lemon peel
  • 2 1/2 oz. medium noodles
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Chop the celery into small pieces.
  3. Drain the salmon and break into large chunks.
  4. In a 1 1/2-quart casserole, combine the chopped celery, condensed cream of shrimp soup, skim milk, frozen broccoli, finely shredded lemon peel, and 1/4 teaspoon pepper.
  5. Add the salmon chunks and uncooked noodles to the casserole, then toss lightly until well mixed.
  6. Cover and bake in the preheated oven for about 50 minutes, stirring once after 25 minutes of cooking, until the noodles are tender.
  7. Sprinkle the shredded mozzarella cheese over the mixture.
  8. Bake uncovered for about 5 minutes more until the cheese is melted and bubbly.
