One-Step Tamale Pie

Ingredients

  • 1 lb. ground beef
  • 1 c. chopped onion
  • 2 garlic cloves, minced
  • 2 (8 oz.) tomato sauce
  • 1 c. milk
  • 2 slightly beaten eggs
  • dashes hot sauce
  • 1 (12 oz.) corn, drained
  • 3/4 c. corn meal
  • 1/2 c. olives
  • 2 tsp. chili powder

Instructions

  1. Cook ground beef, chopped onion, and minced garlic in a skillet until beef is browned and vegetables are tender.
  2. Stir in tomato sauce, drained corn, hot sauce, chili powder, olives, and any other seasonings.
  3. Pour the mixture into a 12 x 7 1/2 x 2-inch pan and spread evenly.
  4. In a separate bowl, combine cornmeal, milk, and slightly beaten eggs, then pour over the beef mixture.
  5. Bake at 350°F for 45 minutes or until a knife inserted into the center comes out clean.
