- Place the quartered potatoes in a 3-quart saucepan and add enough water to cover them.
- Bring the water to a full boil over high heat, which takes about 4 to 6 minutes.
- Reduce heat to medium and continue cooking until the potatoes are fork-tender, about 8 to 12 minutes.
- Drain the potatoes and return them to the saucepan.
- In a small bowl, stir together the chopped onion, melted butter, chopped dill, salt, and pepper.
- Pour the herb mixture over the hot potatoes.
- Cook over medium heat, gently stirring, until thoroughly heated, about 3 to 5 minutes.
