Ingredients

  • 1 3/4 lb. small red potatoes
  • water
  • 1/4 cup finely chopped onion
  • 3 Tbsp. melted butter
  • 1 Tbsp. chopped fresh dill
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Place the quartered potatoes in a 3-quart saucepan and add enough water to cover them.
  2. Bring the water to a full boil over high heat, which takes about 4 to 6 minutes.
  3. Reduce heat to medium and continue cooking until the potatoes are fork-tender, about 8 to 12 minutes.
  4. Drain the potatoes and return them to the saucepan.
  5. In a small bowl, stir together the chopped onion, melted butter, chopped dill, salt, and pepper.
  6. Pour the herb mixture over the hot potatoes.
  7. Cook over medium heat, gently stirring, until thoroughly heated, about 3 to 5 minutes.
