Ingredients

  • 2 Tbsp. butter
  • 1/2 c. thinly sliced onion
  • 1/2 c. thinly sliced green pepper
  • 1 clove garlic, minced
  • 2 to 3 firm tomatoes, wedged
  • 1 tsp. salt
  • dash of pepper
  • 10 eggs
  • 1/2 c. water
  • 2 Tbsp. butter or bacon drippings

Instructions

  1. Cook onion, green pepper, and garlic in butter until tender but not brown.
  2. Stir in tomatoes, salt, and pepper.
  3. Cook just until tomatoes are heated through.
  4. Keep warm while preparing the omelet.
  5. Mix eggs and water with a fork.
  6. Heat butter in a 10-inch omelet pan or skillet until just hot enough to sizzle a drop of water.
  7. Pour in egg mixture.
  8. Cook until the mixture sets at the edges.
