Ingredients

  • 1 cup butter
  • 5 eggs
  • 8 oz. package dates
  • 2 cups chopped pecans
  • 4 oz. can shredded coconut
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup buttermilk
  • 2 cups sugar
  • 1 tablespoon vanilla
  • 1 pound orange candy slices
  • 3 3/4 cups plain flour

Instructions

  1. Preheat oven to 300°F (150°C). Grease and flour a 10-inch tube pan.
  2. In a mixing bowl, beat the butter and sugar until fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in vanilla extract.
  5. Sift together 3 3/4 cups of sifted flour, baking soda, and salt.
  6. Alternately add the flour mixture and buttermilk to the cake batter, beginning and ending with the flour mixture, mixing well after each addition.
  7. In a small bowl, combine 1/4 cup of flour with chopped dates, chopped orange candy slices, chopped pecans, and shredded coconut. Mix well.
  8. Fold the fruit and nut mixture into the cake batter.
  9. Pour the batter into the prepared tube pan.
  10. Bake in the preheated oven for approximately 2 1/2 hours, or until a toothpick inserted into the center comes out clean.
