- Beat margarine until softened.
- Add sugar and beat until light.
- Stir together dry ingredients (flour, baking powder, soda, salt, ginger, coriander) and add alternately with beaten eggs to the margarine-sugar mixture.
- Stir in orange peel, grated carrots, and chopped walnuts.
- Pour batter into two greased and floured 9-inch layer pans.
- Bake at 350°F (175°C) for 40 minutes or until a toothpick inserted in the center comes out clean.
- Heat and stir the orange marmalade.
- Spread marmalade between the layers and on top of the cooled cake.
- Refrigerate before slicing.
