Ingredients

  • 1 large or 2 small unbaked pie shells
  • 1 stick margarine
  • 1 1/2 cups sugar
  • 3 whole eggs
  • 1/2 cup coconut

Instructions

  1. Mix the sugar, beaten eggs, margarine, and coconut together.
  2. Pour the mixture into unbaked pie shells.
  3. Bake at 350°F until the filling is set and the crust is lightly browned.
  4. To prevent the edges from over-browning, cut strips of foil 2 inches wide and long enough to go around the shell edge.
  5. Crease the foil strips over the edges of the pie shell and leave until the pie is done.
