Ingredients

  • 2 1/2 cups sifted flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter
  • 1/2 cup shortening
  • 1 cup packed brown sugar
  • 3/4 cup white sugar
  • 2 unbeaten eggs
  • 1/2 cup water
  • 1 teaspoon almond extract
  • 2 cups quick cooking rolled oats
  • 2/3 cup firm red raspberry preserves

Instructions

  1. Preheat oven to 400°F.
  2. Sift together flour, soda, salt, and cinnamon.
  3. Cream together butter, shortening, brown sugar, and white sugar.
  4. Add eggs, water, and almond extract; beat well.
  5. Blend in the dry ingredients and rolled oats.
  6. Drop dough by rounded teaspoonfuls onto ungreased baking sheets.
  7. Place 1/2 teaspoon of jam on each cookie.
  8. Press jam lightly into the dough.
  9. Top with a level teaspoon of dough.
  10. Bake for 10 to 12 minutes.
