Ingredients
- 2 1/2 cups sifted flour
- 1 teaspoon soda ⓘ
- 1 teaspoon salt ⓘ
- 1/2 teaspoon cinnamon ⓘ
- 1/2 cup butter ⓘ
- 1/2 cup shortening ⓘ
- 1 cup packed brown sugar ⓘ
- 3/4 cup white sugar ⓘ
- 2 unbeaten eggs ⓘ
- 1/2 cup water ⓘ
- 1 teaspoon almond extract
- 2 cups quick cooking rolled oats ⓘ
- 2/3 cup firm red raspberry preserves ⓘ
Instructions
- Preheat oven to 400°F.
- Sift together flour, soda, salt, and cinnamon.
- Cream together butter, shortening, brown sugar, and white sugar.
- Add eggs, water, and almond extract; beat well.
- Blend in the dry ingredients and rolled oats.
- Drop dough by rounded teaspoonfuls onto ungreased baking sheets.
- Place 1/2 teaspoon of jam on each cookie.
- Press jam lightly into the dough.
- Top with a level teaspoon of dough.
- Bake for 10 to 12 minutes.
