Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 2/3 cup toasted wheat germ
  • 1/2 cup sugar
  • 1/2 cup shredded coconut
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup sour cream
  • 2 eggs
  • 1 (11 oz.) can mandarin oranges, drained
  • 1/2 cup chopped nuts

Instructions

  1. In large bowl, combine flours, wheat germ, sugar, coconut, baking soda, and salt.
  2. In small bowl, mix sour cream, eggs, and drained mandarin oranges.
  3. Stir the wet mixture into the dry ingredients just until moistened.
  4. Fold in chopped nuts.
  5. Spoon the batter into paper-lined muffin cups, filling three-quarters full.
  6. Bake in a preheated 400°F (200°C) oven for 18 to 20 minutes.
  7. Allow muffins to cool slightly before serving.
