Ingredients

  • 1 1/2 cups flour
  • 2 teaspoons pumpkin pie spice
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 eggs
  • 2/3 cup packed light brown sugar
  • 1/2 cup sugar
  • 2/3 cup pumpkin
  • 1/3 cup butter or margarine melted
  • 2 tablespoons orange juice

Instructions

  1. Combine the flour, pumpkin pie spice, baking powder, cinnamon, and salt in a bowl and set aside.
  2. In a large bowl, beat the eggs for 2 minutes. Add both sugars and beat until well combined.
  3. Beat in the pumpkin, melted butter, and orange juice until blended.
  4. Pour the batter into prepared pans coated with nonstick spray.
  5. Bake until a toothpick inserted in the center comes out clean at 350°F.
  6. Bake mini pans for 30 minutes or a 9 x 5-inch pan for 50 to 55 minutes.
