Ingredients

  • 2 Tbsp. brown sugar
  • 2 tsp. flour
  • 1 tsp. butter, melted
  • 1/4 tsp. ground cinnamon
  • 1 c. flour
  • 1 c. quick cooking oats
  • 1/2 c. chopped pecans
  • 1/4 c. sugar
  • 2 tsp. grated orange rind
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. orange juice
  • 1/4 c. milk
  • 3 Tbsp. vegetable oil

Instructions

  1. Combine brown sugar, flour, melted butter, and ground cinnamon, mixing until crumbly. Set aside.
  2. In a medium mixing bowl, stir together flour, quick cooking oats, chopped pecans, sugar, grated orange rind, baking powder, and salt.
  3. Make a well in the center of the dry ingredients.
  4. In a separate bowl, combine orange juice, milk, vegetable oil, and egg.
  5. Pour the wet ingredients into the well of the dry ingredients and stir just until moistened.
  6. Spoon the batter into greased muffin pans, filling each about 3/4 full.
  7. Sprinkle the cinnamon mixture evenly over the tops of the muffins.
  8. Bake at 425°F (220°C) for 15 minutes or until golden brown.
