Ingredients
- 1/2 cup shortening ⓘ
- 1 1/2 cups sugar ⓘ
- 1 cup cooked, mashed pumpkin ⓘ
- 2 eggs ⓘ
- 1/3 cup frozen orange juice concentrate, thawed ⓘ
- 1 2/3 cups all-purpose flour ⓘ
- 1 teaspoon baking powder ⓘ
- 1/2 teaspoon baking soda ⓘ
- 3/4 teaspoon salt ⓘ
- 1/2 teaspoon allspice ⓘ
- 1/2 teaspoon cloves ⓘ
- 1/2 teaspoon cinnamon ⓘ
- 1/2 teaspoon nutmeg ⓘ
Instructions
- Cream the shortening until smooth.
- Gradually add the sugar, beating well.
- Add pumpkin, eggs, and orange juice; mix thoroughly.
- Combine remaining ingredients, mixing well.
- Stir into the pumpkin mixture until just blended.
- Pour the batter into a greased and floured 13 x 9-inch baking pan.
- Bake at 350°F (175°C) for 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean.
- Cut into squares and serve.
