Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 1 cup cooked, mashed pumpkin
  • 2 eggs
  • 1/3 cup frozen orange juice concentrate, thawed
  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Cream the shortening until smooth.
  2. Gradually add the sugar, beating well.
  3. Add pumpkin, eggs, and orange juice; mix thoroughly.
  4. Combine remaining ingredients, mixing well.
  5. Stir into the pumpkin mixture until just blended.
  6. Pour the batter into a greased and floured 13 x 9-inch baking pan.
  7. Bake at 350°F (175°C) for 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean.
  8. Cut into squares and serve.
