Ingredients

  • 1 lb. fresh or frozen orange roughy fillets
  • 1 slice onion
  • 1/4 tsp. salt
  • 1 c. sliced mushrooms
  • 6 green onions
  • 1 clove garlic
  • 1 Tbsp. cooking oil
  • 2 tsp. Worcestershire sauce
  • 1/2 c. water
  • 1 Tbsp. lemon juice
  • 1/8 tsp. pepper
  • 1/2 green pepper

Instructions

  1. Thaw fish if frozen.
  2. In a large skillet, combine water, onion slice, lemon juice, salt, and pepper.
  3. Bring to boiling; reduce heat and add fish fillets. Simmer for 5 to 8 minutes or until fillets flake when tested.
  4. Meanwhile, in a saucepan, cook mushrooms, green pepper, green onions, and garlic in oil until tender.
  5. Stir in chopped tomatoes and Worcestershire sauce; cook for 2 minutes. Transfer vegetables to a serving platter.
  6. Using a slotted spoon, remove fish from cooking liquid and place on the vegetables.
