Oriental Rice is a delightful blend of long grain and wild rice, enhanced with the crunch of water chestnuts and the earthy notes of mushrooms and onions. Ingredients

  • 1 (6 oz.) pkg. long grain and wild rice
  • 1/4 c. butter or margarine
  • 1/2 c. water chestnuts, sliced
  • 1/2 c. sliced mushrooms
  • 1 small onion, sliced
  • 1 Tbsp. soy sauce
  • 3 c. chicken broth

Instructions

  1. Place rice, seasoning packet, butter, water chestnuts, mushrooms, onion, and soy sauce in a 3-quart casserole.
  2. Microwave on High (100%) for 3 to 4 minutes or until onion is tender, stirring halfway through cooking time.
  3. Pour in chicken broth.
  4. Cover with a tight fitting lid or plastic wrap.
  5. Microwave on High for 5 to 7 minutes or until boiling.
  6. Stir, then microwave on Medium (50%) for 40 to 45 minutes or until rice is tender and liquid is absorbed.
