Ingredients

  • 4 scallions, cut in 1-inch pieces
  • 2 tsp. margarine
  • 1 lb. scallops
  • 1 tsp. grated orange rind
  • 1 Tbsp. grated ginger root
  • 1 Tbsp. teriyaki sauce
  • 1/8 tsp. pepper
  • 1/2 cup water
  • 1 Tbsp. cornstarch

Instructions

  1. Place scallions and margarine in a 9 x 9-inch Pyrex dish. Microwave, uncovered, at High for 2 minutes or until margarine is melted.
  2. Stir in scallops, orange rind, ginger root, teriyaki sauce, and pepper.
  3. Cover with plastic or wax paper.
  4. Microwave on High for 3 minutes or until scallops are opaque.
  5. Remove scallops and onions with a slotted spoon, reserving the liquid.
