A hearty Christmas breakfast casserole with sausage, cheese, and green onions baked to perfection, perfect for festive mornings and group gatherings.

Ingredients

  • 1 1/2 lb. bulk sausage (regular or hot)
  • 2 c. milk
  • 6 slices white bread
  • 6 eggs
  • 3 green onions, including tops, chopped
  • 2 c. Cheddar cheese, shredded
  • 1 tsp. salt
  • 1 tsp. dry mustard
  • 1 small can chopped green chiles

Instructions

  1. Brown the sausage; drain well.
  2. Remove bread crusts and cube the bread slices.
  3. In a bowl, stir milk, salt, dry mustard, and chopped green chiles into beaten eggs.
  4. Spread the bread cubes in a well-greased 9 x 12-inch dish; pour in the egg mixture evenly over the bread.
  5. Layer chopped green onions, crumbled sausage, and shredded Cheddar cheese on top.
  6. Cover and refrigerate overnight.
  7. Uncover and bake at 325°F for 1 hour.
