Ingredients

  • 2 lb. lean beef or venison
  • 2 Tbsp. Worcestershire sauce
  • 1/4 tsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1/2 c. water
  • 1/4 c. soy sauce
  • 1/4 tsp. pepper
  • 1 tsp. salt
  • 3 dashes liquid smoke

Instructions

  1. Trim semi-frozen meat and slice into 1/8 to 1/4-inch thick strips.
  2. In a bowl, combine Worcestershire sauce, garlic powder, cayenne pepper, water, soy sauce, pepper, salt, and liquid smoke.
  3. Stir until the mixture is well dissolved.
  4. Add the meat strips to the marinade and coat thoroughly.
  5. Let stand for 1 hour or refrigerate overnight to absorb flavors.
  6. Remove excess liquid from the meat strips.
  7. Arrange the strips close together on oven or cake racks in shallow pans.
  8. Dry the meat in the oven at the lowest temperature (150° to 200°F) until it turns brown and feels hard, about 4 to 7 hours.
  9. Pat off any beads of oil from the dried meat.
  10. Cool the jerky and store in airtight bags or jars for indefinite keeping.
