Ingredients

  • 2 to 3 tsp. chili powder
  • 1/2 c. onion, chopped
  • 1 Tbsp. butter
  • 2 lb. ground beef
  • 2/3 c. ketchup
  • 1/2 c. water
  • 1/4 c. celery, chopped
  • 2 Tbsp. lemon juice
  • 1/2 to 1 c. tomato juice
  • 1 Tbsp. brown sugar
  • 1 1/2 tsp. Worcestershire
  • 1 1/2 tsp. salt
  • 1 c. canned tomatoes, crushed
  • 1 tsp. vinegar
  • 1/4 tsp. dry mustard
  • 1 (16 oz.) can kidney beans with liquid

Instructions

  1. Saute chopped onion in butter until translucent.
  2. Add ground beef and brown lightly; drain off excess fat.
  3. Add chili powder, ketchup, water, chopped celery, lemon juice, tomato juice, brown sugar, Worcestershire sauce, salt, crushed tomatoes, vinegar, and dry mustard. Stir well.
  4. Simmer the mixture for 30 minutes.
  5. Cool slightly.
  6. Add canned kidney beans with liquid, remaining tomato juice, and chili powder. Stir to combine.
  7. Simmer for an additional hour.
