Sweet and crunchy peanut bars with a buttery crumb base and rich butterscotch topping, perfect for sharing at parties, picnics, or as a satisfying homemade treat.

Ingredients

  • 3 3/4 cups flour
  • 1 cup butter
  • 1 1/2 cups brown sugar
  • pinch of salt
  • 12 oz. package butterscotch chips
  • 3 tablespoons butter
  • 3 tablespoons water
  • 1/2 cup white Karo syrup

Instructions

  1. Mix flour, butter, brown sugar, and salt until crumbly.
  2. Pat the mixture flat into pans.
  3. Bake at 375°F for 10 minutes.
  4. Meanwhile, melt butterscotch chips, butter, water, and Karo syrup together.
  5. Pour the melted mixture over the peanuts.
  6. Spread the topping over the hot crumb base and bake for an additional 10 minutes.
  7. Loosen edges while warm.
  8. Cool and cut into 2-inch squares.
