Ingredients

  • 6 oz. Second Nature Egg Substitute or 3 eggs
  • 2 c. sugar
  • 1 c. applesauce
  • 1 Tbsp. vanilla
  • 3 c. flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 4 c. grated apples
  • 1/2 to 1 c. pecan pieces

Instructions

  1. Preheat oven to 325°F.
  2. Spray an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with low-fat spray.
  3. Mix egg substitute, sugar, and applesauce; add vanilla.
  4. Combine flour, baking soda, and cinnamon.
  5. Add to egg mixture alternating with grated apples.
  6. Add pecan pieces.
  7. Pour batter into prepared loaf pan.
  8. Bake for 1 hour and 10 minutes.
  9. Remove from oven and let cool slightly.
  10. Wrap warm loaf tightly for easier slicing and extra moistness.
  11. Store overnight for best flavor and easier slicing.
