Ingredients

  • 1 rabbit, cut up
  • 6 cups water
  • 2 chicken broth cubes
  • 2 beef broth cubes
  • 2 bay leaves
  • 1 onion, chopped
  • 2 stalks celery, cut up
  • 2 carrots, sliced
  • 1/2 teaspoon pepper

Instructions

  1. Put rabbit pieces in a medium roaster in a single layer.
  2. Combine water, chicken broth cubes, beef broth cubes, bay leaves, and pepper in a pan and bring to a boil.
  3. Stir to dissolve the broth cubes completely.
  4. Sprinkle chopped onion, celery, and sliced carrots over the rabbit in the roaster.
  5. Pour hot broth over the vegetables and rabbit.
  6. Bake at 350°F for 2 to 2.5 hours until the rabbit is tender.
