Ingredients

  • 1 package (1/2 oz.) dry yeast
  • 1/2 cup warm water (110-115°F)
  • 4 cups flour
  • 2 teaspoons baking powder
  • 2 tablespoons baking soda
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 6 eggs
  • 1 quart buttermilk
  • 1/4 cup vegetable oil

Instructions

  1. In a small bowl, dissolve yeast in warm water and let stand for 5 minutes.
  2. In a large bowl, combine the dry ingredients: flour, baking powder, baking soda, sugar, and salt.
  3. Beat eggs, buttermilk, and vegetable oil together.
  4. Stir the wet mixture into the dry ingredients just until moistened.
  5. Stir in the yeast mixture.
  6. Cover and refrigerate for 8 hours or overnight.
  7. To make pancakes, pour batter by 1/4 cupfuls onto a greased hot griddle.
  8. Turn when bubbles form on top of the pancakes.
  9. Cook until the second side is golden brown.
