Ingredients

  • 1/2 c. chopped onion
  • 1/2 c. shredded carrot
  • 2 1/2 c. skim milk
  • 1/4 c. all-purpose flour
  • 2 Tbsp. nonfat dry milk powder
  • 1/4 tsp. salt
  • 1 (8 oz.) bottle clam juice
  • 1 (10 oz.) pkg. frozen spinach, thawed and drained

Instructions

  1. Spray a large saucepan with nonstick spray coating.
  2. Cook onion and carrot in the saucepan over medium-high heat until tender but not browned.
  3. In a small bowl, stir together 1 cup of skim milk, the flour, nonfat dry milk powder, and salt; then stir into the vegetable mixture.
  4. Stir in the remaining milk and clam juice.
  5. Cook over medium heat until the mixture is thick and bubbly.
  6. Stir in the undrained oysters and spinach.
  7. Heat through, stirring occasionally.
  8. Ladle into soup bowls to serve.
