Instructions
- In a large skillet, cook chicken and shrimp in oil until tender; remove and set aside.
- Add onion and garlic to the skillet and cook until onion is tender.
- Add rice; stir until opaque.
- Add saffron, chicken broth, and lemon juice; cover and simmer 20 minutes until rice is tender.
- Add cooked chicken and shrimp back into the skillet and stir to combine.
- Chill the mixture for several hours.
- Serve on a bed of green salad greens.
- Garnish with green olives, avocado slices, and halved cherry tomatoes if desired.
