Paella Salad

A vibrant, flavorful salad combining tender chicken, shrimp, saffron-infused rice, and fresh greens, perfect for light, satisfying gatherings or a summer lunch.

Ingredients

  • 2 whole boneless chicken breasts
  • 1 lb. shrimp, shelled and deveined
  • 2 Tbsp. salad oil
  • 1 large clove garlic, minced
  • 1 medium onion, chopped
  • 1 1/2 cups Caroline extra long grain rice
  • 1/4 tsp. powdered saffron
  • 3 1/2 cups chicken broth
  • 2 tsp. lemon juice
  • Crisp salad greens
  • Green olives

Instructions

  1. In a large skillet, cook chicken and shrimp in oil until tender; remove and set aside.
  2. Add onion and garlic to the skillet and cook until onion is tender.
  3. Add rice; stir until opaque.
  4. Add saffron, chicken broth, and lemon juice; cover and simmer 20 minutes until rice is tender.
  5. Add cooked chicken and shrimp back into the skillet and stir to combine.
  6. Chill the mixture for several hours.
  7. Serve on a bed of green salad greens.
  8. Garnish with green olives, avocado slices, and halved cherry tomatoes if desired.
